    Gluten Free Cinnamon Oat Muffins

    If you like cinnamon rolls, but prefer to maintain a healthy lifestyle, you'll love these muffins made from Happy Day Brands Superfood Oats, ground down into flour. Added bonus: this recipe is cholesterol free as the seeds from the oatmeal blend act as an egg substitute for baking purposes. They have all the softness and flavor you want from a baked good, with an upgraded nutrition profile.

    Vegan, Gluten-Free, Paleo Friendly, Dairy-Free




    • 3 tbl vegan butter
    • 1 tsp cinnamon
    • 3 tbl coconut sugar
    • 1/2 cup chopped pecans


    1. Preheat oven to 375.
    2. For the muffins: thoroughly combine dry ingredients, then add the remaining and stir until batter is smooth.
    3. Lightly spray muffin tin and fill each space 3/4 of the way.
    4. Prepare topping (not including pecans) and drizzle over top the batter.
    5. Sprinkle on chopped pecans.
    6. Bake for 18-20 minutes until center comes clean with a toothpick.
