    DARK CHOCOLATE CASHEW BUTTER BLONDIES

    The ooey gooey, grain-free, gluten-free healthy-enough-for breakfast (exhibit A: me yesterday morning) and indulgent-enough-for-dessert (exhibit B: me last night) sweet treat you need in your life this weekend. I packed these puppies with all the good stuff: creamy cashew butter, collagen, and an entire cup of mood-boosting chocolate (the more, the merrier, yeah?) Happy baking!

    Ingredients:

    • 1/3 cup ghee or butter
    • 2/3 cup coconut sugar or powdered monk fruit/erythritol blend for keto 
    • 1/2 cup creamy cashew butter (peanut butter makes a delicious substitute)
    • 2 eggs
    • 2 teaspoons vanilla 
    • 1.5 cups Happy Day Brands Almond Flour (if you have a kitchen scale, measure 130 grams)
    • 2 scoops @ancientnutrition collagen protein 
    • 3/4 teaspoon sea salt 
    • 3/4 teaspoon baking powder 
    • 1 cup chocolate chips

    Directions:

    1. Preheat oven to 350 F. Line a 9x9-inch baking dish with parchment paper; set aside.
    2. In a large bowl, combine ghee, sugar (or other sweetener), and cashew butter. Stir until well combined.
    3. Add eggs to cashew butter mixture, one at a time, and whisk until incorporated. 
    4. Add almond flour, collagen, salt, and baking powder; mix well (the mixture will be thick!). Fold in half the chocolate chips. Pour batter into prepared pan and dot the top with remaining chocolate. 
    5. Bake for 20-25 minutes. Blondies will be slightly gooey in the center when you remove them from the oven, but will continue cooking while cooling.
