Brownies for breakfast? Don’t mind if I doooo! You know it’s going to be a good day when it starts this way. Baked a batch of FLOURLESS CASHEW BUTTER BROWNIES yesterday afternoon, and they turned out so deliciously fluffy, fudgy, and (warning: I’m going to use the ‘m’ word here) moist. They’re indulgent enough for dessert and healthy enough for breakfast (the @ancientnutrition multi collagen protein packs a protein punch + beauty boost), which obviously warrants multiple rounds in one day.
1 cup creamy cashew butter (can sub peanut or almond butter)
Preheat oven to 325 F. Line an 8 x 8” baking pan with parchment paper; set aside.
In a bowl, combine first four ingredients and stir until well incorporated
Add cocoa powder and mix until the batter resembles a thick frosting-like texture. Stir in vanilla, salt, and eggs; stir until incorporated. Add almond flour and mix well.
Fold in chocolate chips(optional) and pour batter into prepared pan. Bake for approximately 25-30 minutes.
