    Not So Sinful Chocolate Peanut Butter Bars

    These dessert bars are decadent, delicious, and satisfying without causing a huge sugar rush and crash. I love that Happy Day doesn’t stop at just one good quality about each product. Not only are the chocolate wafers organic and fair trade, but they’re made with coconut blossom sugar too, which has a lower glycemic load than regular cane sugar. Oh and let’s not forget that aside from all the goodness, their chocolate is absolutely delicious too! Enjoy this healthy treat, and have a happy day.

    Vegan, Flourless, Gluten-Free, Paleo-Friendly



    1. Thoroughly combine oatmeal, coconut oil, and maple syrup, then pour and press your mixture firmly into a 9x9 baking dish lined with parchment paper.
    2. Melt chocolate and peanut butter together in a microwave safe bowl. Times will vary, but it should require approximately 2-3min.
    3. Stop the microwave halfway through to stir, and continue heating til completely melted.
    4. Stir a final time and pour over your oat crust.
    5. Use a spatula to spread chocolate evenly, sprinkle chopped pecans on top if desired, and place in freezer for at least 1 hr to thoroughly set.
    6. When ready to enjoy, lift the entire dessert out using the edges of the parchment paper, which can now be peeled off. Cut into squares, and share with friends.
