    Dark Chocolate Peanut Butter Honey Walnut Banana Bread

    Banana bread has been our minds this week, so our weekend plans are going to include baking and devouring a loaf just like this one. This bread is soft, thick, slightly sweet, and super moist — all the banana bread prerequisites — and it features Happy Day Brands premium Non-GMO, organic, soy free, vegan and paleo-friendly Dark Chocolate Wafers.

    Gluten Free, Dairy Free, Paleo-Friendly


    • 2 large overripe bananas 
    • 1/4 cup coconut oil 
    • 1/4 cup creamy peanut butter (or almond butter)
    • 2 Tbsp. honey
    • 1 tsp. vanilla
    • 2 eggs
    • 1/4 cup almond flour
    • 1/4 cup coconut flour
    • 1/2 tsp baking soda
    • 1/2 tsp baking powder
    • 1/2 tsp salt
    • 1/2 tsp cinnamon
    • 1/2 cup chopped walnuts
    • 1/2 cup Happy Day Organic Dark Chocolate Wafers (soy free, vegan, gluten free)


    1. Preheat oven to 350F.
    2. Grease an 8x4 baking pan, then line with parchment paper. 
    3. In a small bowl, combine coconut flour, almond flour, baking powder, baking soda, salt, and cinnamon. 
    4. In a large bowl, melt coconut oil and peanut butter in a microwave (approx. 1 minute). Add mashed bananas, honey, and vanilla. Mix well. 
    5. Stir in eggs. 
    6. Add dry ingredients to wet and stir until well combined. 
    7. Pour batter into prepared pan and dot with chocolate wafers. Bake 30-40 minutes, or until a toothpick comes out clean.
