Grain-Free Chocolate Chip Muffins

I came up with these muffins because I was looking for something using dates in place of sugar and utilizing good quality ingredients. These muffins are moist and chewy with just the right amount of sweet.

Gluten-Free and Grain-Free


  • 2 cups almond flour
  • 1/4 tsp pink salt
  • 1/2 teaspoon baking powder (aluminum free)
  • 1/4 cup grass fed butter melted
  • 1/3 cup d’bash date nectar
  • 3 large eggs room temp
  • 1 tsp vanilla extract
  • 2/3 cup Happy Day Brand Chocolate Wafers


    1. Preheat oven to 350 F
    2. Line a cupcake pan with 12 paper liners and set aside.
    3. In a large bowl, whisk almond flour, salt and baking powder.
    4. Next add the butter, date nectar, eggs and vanilla extract and mix in until well combined. 
    5. Stir in the chocolate chips.
    6. Bake for 20-22 minutes or until center is firm.
    7. Set aside and let cool.
