    Dairy Free Strawberry Oatmeal Ice Cream

    If you can get your superfoods in through ice cream, I mean why do it any other way?? The oatmeal brings an added creaminess to this recipe, and still holds the distinct Happy Day flavor profile. It’s a perfect compliment to the fresh fruit flavors, and a sweet treat to enjoy as we move into the warmer months.

    Vegan, Gluten-Free, Dairy Free



    1. Pour the contents of the Happy Day Superfoods Oatmeal package into a high-powered blender.
    2. Blend on high until the oats have reached a fine powder consistency.
    3. Pour into a sealable container, and scoop out 1 cup of flour, putting it back in the blender. (The rest of the flour can be used for future batches or in any baked good, as a gluten-free option.)
    4. Add the next three ingredients to the blender and combine thoroughly. 
    5. Pour mixture into ice cream maker.
    6. Add fresh strawberries in as it’s churning, and continue to churn until thick (about 30min).
    7. Enjoy as soft serve, or transfer to a glass dish and freeze til scoopable.
