1/2 teaspoon kosher salt (if using unsweetened applesauce only)
Preheat oven to 350 degrees. Mash bananas (skip this if using applesauce) and stir to combine with oats, flour and maple syrup. Add kosher salt with the above ingredients if using the applesauce.
Gently stir in extras. Line a baking sheet with parchment paper and drop 2 tablespoons of cookie dough per cookie onto the tray. Press down with the back of a metal spoon and shape into cookies (these do not spread.)
Bake for 18-20 minutes, or until cookies are lightly golden on top and just set to the touch.
Extra Add Ins (choose one):
1⁄4 cup coconut shreds, 1⁄4 cup dried pineapple, & 1⁄4 cup pepitas & 1⁄2 teaspoon ground ginger
