S’MORE COOKIES

I never went to camp and don’t have a campfire but I do have an oven and I’d say it’s working out pretty okay. these are beyond...😏 I bought marshmallows in bulk because I had a feeling I’d be abusing them via these cookies. and I was right so good thing I’m self aware. 

YOU WILL NEED

  • 1 1/4 cup Happy Day Brands Almond Flour
  • 3 tbsp coconut flour
  • 1/3 cup almond butter
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil
  • 1 tsp baking soda
  • 1 egg (can sub 2 flax eggs for vegan option)
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1/3 cup mini chocolate chips 
  • handful dark chocolate chunks 
  • 1/2 cup mini vegan marshmallows (3-4 marshmallows per cookie)

    WHAT YOU DO

    Preheat oven 350 degrees. Cream together egg, melted and cooled coconut oil, maple syrup, almond butter, and vanilla until smooth. Mix dry ingredients together. Combine wet and dry ingredients. Fold in mini chocolate chips. Bake for 15 minutes. Pull the cookies out of the oven and press a few dark chocolate chunks on top while the cookies are still warm. As the chocolate melts, add a few vegan marshmallows on top. Pop back in the oven until marshmallows are golden (make sure to keep an eye on them so they don’t burn) and edges of cookies are crisp and delicious. Enjoy!!

    I grew up in Newport Beach, California and spent part of high school there and in London, England. I think I owe it to London for making me the foodie that I am today – from hole in the wall Indian joints to some of the most incredible Sicilian style pizza I’ve ever had, London’s foodscape was transformative for my palate. After moving back to California to spend my final two years of high school, I attended UC Berkeley (goooo bears) where I was completely engulfed by the amazing gastronomy in both the windy city and Berkeley itself. Living and studying so close to a city as amazing as San Francisco, not to mention in eating distance of some of the best food I’ve ever had (I’m looking at you Chez Panisse, Vik’s Chaat House, Ici Ice Cream, Bi-Rite Creamery…) has made me into the human “Yelp” of my friend group (and family, for that matter) that I am today.

    Fast forward to now, I am the host of NBC’s Digital Show, #Cooking with Samah Dada and feel lucky to be living and working in New York City pursuing my passion for wellness, recipe development, and food through #DADAEATS.
