Pumpkin Spice Baked Oats

The way I see it, there is a variety of baked oats that’s perfect for any time of year. For now, pumpkin spice is ABSOLUTELY necessary. All the coziness of fall in a nice little ramekin for one.

Ingredients:

  • 1/2 cup Happy Day Brands gluten free Rolled Oats (I like to soak mine overnight for easier digestion)
  • 1/2 ripe banana, mashed
  • 1/4 cup pumpkin purée
  • 3 TB milk of choice
  • 1 TB pure maple syrup
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • chocolate chips

Directions:

  1. Preheat oven to 350.
  2. In a bowl, combine all ingredients.
  3. Grease a ramekin or any small oven safe dish with coconut oil.
  4. Pour mixture in.
  5. Bake for 30 minutes or until set. If desired, during last 10 minutes of baking, sprinkle with Happy Day Brands Chocolate Wafers
