Pumpkin Spice Baked Oats

The way I see it, there is a variety of baked oats that’s perfect for any time of year. For now, pumpkin spice is ABSOLUTELY necessary. All the coziness of fall in a nice little ramekin for one.
- 1/2 cup old fashioned oats (I like to soak mine overnight for easier digestion)
- 1/2 ripe banana, mashed
- 1/4 cup pumpkin purée
- 3 TB milk of choice
- 1 TB pure maple syrup
- 1 tsp pumpkin pie spice
- 1/2 tsp baking powder

- Preheat oven to 350.
- In a bowl, combine all ingredients.
- Grease a ramekin or any small oven safe dish with coconut oil.
- Pour mixture in.
- Bake for 30 minutes or until set. If desired, during last 10 minutes of baking, sprinkle with Happy Day Brands Chocolate Wafers
