Combine peanut butter layer ingredients in a medium-sized bowl, mixing until incorporated and smooth. Transfer to an 8x8” baking pan lined with parchment paper and press to cover the bottom of the pan evenly. Put pan in the freezer while you prepare the chocolate later.
Make the chocolate layer: Combine peanut butter and coconut oil in a small microwave-safe bowl; microwave 30 seconds, until melted. Stir in powdered sugar. Remove pan from freezer and spread the chocolate layer on top of peanut butter layer. Top with 16 pretzels and sprinkle with kosher salt or Maldron sea salt. Freeze 30 minutes before slicing.
