We’re big fans of all things oats and we’re also big fans of baking with them. Enter: Healthy Peanut Butter Pumpkin Blender Muffins. One blender. Zero mixing bowls. Minimum time requirement. Maximum looove ❤️.
1 cup pumpkin purée (make sure not to use pumpkin pie mix)
1/4 cup peanut butter (can sub cashew or almond butter)
1/2 cup honey (can sub maple syrup)
2 teaspoon vanilla
1/4 cup almond milk
2 1/4 cups Happy Day Brands GF or regular Rolled Oats
1 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup of chocolate chips
Combine all ingredients, except chocolate chips, in a blender or food processor.
Blend until smooth.
Stir in chocolate chips.
Pour batter into a greased 12-cup muffin tin.
Dot tops with additional chocolate chips (optional), and bake for 18-20 minutes.
