Healthy Peanut Butter Pumpkin Blender Muffins

We’re big fans of all things oats and we’re also big fans of baking with them. Enter: Healthy Peanut Butter Pumpkin Blender Muffins. One blender. Zero mixing bowls. Minimum time requirement. Maximum looove ❤️.

Ingredients:

  • 1 cup pumpkin purée (make sure not to use pumpkin pie mix)
  • 1/4 cup peanut butter (can sub cashew or almond butter)
  • 1/2 cup honey (can sub maple syrup)
  • 2 eggs
  • 2 teaspoon vanilla
  • 1/4 cup almond milk
  • 2 1/4 cups Happy Day Brands GF or regular Rolled Oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup of chocolate chips

Directions:

  1. Combine all ingredients, except chocolate chips, in a blender or food processor.
  2. Blend until smooth.
  3. Stir in chocolate chips.
  4. Pour batter into a greased 12-cup muffin tin.
  5. Dot tops with additional chocolate chips (optional), and bake for 18-20 minutes.
