• 2 ripe bananas • 2 eggs • 1 cup creamy peanut butter, divided • ½ cup melted coconut oil or softened butter • 6 tbsp. greek yogurt • 1½ cups Happy Day Brands Gluten Free 1 to 1 Baking Flour • 1 tsp. baking powder • ½ tsp baking soda • 1 pinch cinnamon • ½ tsp vanilla • 1/4 cup brown sugar or coconut sugar • 1/2 cup chopped walnuts
1. Preheat oven to 350 F. 2. In a bowl, mash bananas with a fork; add eggs and mix until smooth. Mix in 1/2 cup peanut butter and softened butter, stirring until fully incorporated. Stir in yogurt. 3. In another bowl, add all dry ingredients except walnuts, whisking till incorporated. Gradually add dry ingredients to wet, mixing until smooth. 4. Transfer bather to a loaf pan lined with parchment paper. Warm remaining peanut butter and spread on top of the batter. Sprinkle with walnuts. 5. Bake approximately 1 hour, or until a toothpick comes out clean.
