    Double Dark Chocolate Banana Bread

    Got some ripe bananas on hand? They’re begging to be baked into this fudgy, moist, can’t-stop-at-one-slice bread!

    Gluten Free, Dairy Free, Paleo


    • 2 cups mashed banana (about 4 large bananas)
    • 4 eggs
    • 1/2 cup cashew butter (can sub peanut butter or almond butter)
    • 6 tablespoons coconut oil, melted
    • 1 teaspoon vanilla
    • 1/4 cup coconut flour, sifted
    • 1/4 cup almond flour (can sub all purpose flour or a GF flour blend)
    • 6 tablespoons cocoa powder
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • Pinch of salt
    • 3/4 cup Happy Day Brands Organic Dark Chocolate Wafers or Happy Day Brands Premium Chocolate Wafers, divided


    1. Preheat oven to 350 F. In a large bowl, combine banana, cashew butter, vanilla, and coconut oil. Stir until well combined.
    2. Add eggs.
    3. Add coconut flour, almond flour, cocoa powder, baking powder, baking soda, and salt. Mix well, until a smooth batter forms (you may want to use a mixer to make this process easier).
    4. Stir in 1/2 cup chocolate wafers. Pour batter into prepared pan and sprinkle the remaining 1/4 cup chocolate wafers on top.
    5. Bake for 40-45 minutes, or until a toothpick comes out clean.
