    Peppermint Chocolate Dipped Ice Cream Sandwiches

    It may be the day after Christmas, but peppermint flavors live on for the whole month of December and I think a little into January. We have a lot of Dairy Free/Gluten Free people in our family, so when my mom asked me to make something up for Christmas Eve dessert I tried to think outside the box. These treats are insanely delicious, creamy and SUPER EASY. If you're looking for something sweet and love ice cream and chocolate, these ice cream sandwiches are for you! They are Gluten Free, Soy Free and depending upon your graham choice everything is Dairy Free - Now that's something to be happy about!

    Ingredients:

    • 1 box Pamelas Gluten Free Honey Grahams (these have butter so for a full DF option use Kinnikinnick Foods S'moreables Graham Style Crackers)
    • 1 pint dairy-free vanilla ice cream, slightly softened (I used my favorite NadaMoo! Organic Vanilla...Ahhh) 
    • 1 cup Happy Day Organic Chocolate Wafers 68% or Happy Day All Natural Chocolate Wafers 60%
    • 1 tablespoon coconut oil
    • 1 candy cane or 3 little candy canes, crushed

    Directions:

    1. Line a small cookie sheet with wax paper.
    2. Place 5 Honey Grahams on the wax paper.
    3. Scoop 2 spoonfuls or 1 ice cream scooper full of dairy-free ice cream into the center of each Honey Graham (spread a bit so when you put the graham on top it doesn't break when you press it down) 
    4. Top with a second honey graham and press down lightly.
    5. Place ice cream sandwiches in the freezer for 1 hour.
    6. Place candy canes in Ziplock bag and crush with rolling pin.
    7. After the ice cream sandwiches are firm, place chocolate chips and coconut oil in a small microwaveable safe dish and heat for 30 seconds. Stir then add another 30 seconds (60 seconds total). Heat in saucepan on the stove as an alternative. 
    8. Stir chocolate again until smooth! 
    9. Dip the ends of each ice cream sandwich into the chocolate and sprinkle with crushed candy cane. Place it back on the wax paper and repeat until all 5 ice cream sandwiches are dipped.
    10. Store in an airtight container in the freezer. Serve frozen.
