PALEO TWIX BARS

One of my favorite candy bars growing up was Twix bars. I loved the different layers and that delicious chocolate coating. I decided to create a homemade version of a Twix bar and they came out absolutely delicious! I gave them to friends and family and no one had any clue they were made with healthier ingredients. Definitely a win in my book! Bonus: they’re super easy to make. Enjoy!

GRAIN FREE, GLUTEN FREE, DAIRY FREE, PALEO

Ingredients:

Shortbread Layer:

  • 1 cup Happy Day Brands Almond Flour
  • 1/4 cup Happy Day Brands Coconut Flour
  • 1/4 cup coconut oil, softened
  • 3 TBL honey
  • 1/2 tsp vanilla

Caramel Layer:

  • 1/2 cup cashew butter
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla
Chocolate Layer:
  • 1 TBL coconut oil
  • 1 cup chocolate chips
 Directions:
  1. Preheat oven to 350.  Line a 9×9 glass pan with parchment paper.

  2. Make the shortbread layer first.  Add ingredients to a large mixing bowl and mix until combined.  Spread into pan and bake for 9-11 minutes.

  3. While the shortbread layer bakes, make the caramel.  Add all ingredients to a medium saucepan over medium heat.  Bring to a boil then let simmer for 10 minutes until creamy and thick, stirring constantly.

  4. Let shortbread layer cool for 5-10 minutes then pour the caramel on top.

  5. Refrigerate for 30 minutes.

  6. Melt chocolate and coconut oil and pour over the caramel layer.  Freeze at least 30 minutes.

Best served chilled.
