    Flourless Blueberry Oatmeal Cashew Butter Muffins

    Flourless Blueberry Oatmeal Cashew Butter muffins that are so moist and fluffy, you’ll never believe they’re light and healthy! This recipe features our superfood oatmeal blend, which is packed with extra fiber and nutrients.


    • 1 cup unsweetened applesauce
    • 1 cup natural cashew butter (can sub almond, peanut, sunflower seed butter etc.)
    • 1/2 cup honey (or maple syrup)
    • 1 egg
    • 1 1/2 teaspoons pure vanilla
    • 1/2 teaspoon baking soda
    • pinch of salt
    • 1 cup gluten free Happy Day Brands Superfood Oatmeal blend (Whole Oats, Teff, Chia, Golden Flax, Hemp, Red Quinoa and Amaranth)
    • 1/2 cup blueberries + more for topping (optional)


    1. Preheat oven to 350 degrees F.
    2. Line a 12-cup muffin tin with muffin cup liners OR spray muffin tin with nonstick cooking spray.
    3. In a food processor or high speed blender, add applesauce, cashew butter (or almond butter/peanut butter) honey, egg, vanilla extract, baking soda, and salt. Process until just combined.
    4. Fold in oats until evenly incorporated, then fold in blueberries.
    5. Using a 1/4 measuring cup, fill muffin cups just over half full.
    6. Add extra blueberries to the tops, if desired.
    7. Bake for 25 to 30 minutes or until a toothpick comes out mostly clean.
