Homemade Chocolate Chip Granola Bars

These chunky and chewy granola bars bring me right back to my childhood. I used a variety of nuts (pecans, almonds and cashews) to achieve the perfect crunchy consistency.

Ingredients:

  • 1.5 cups nuts, slightly crushed
  • 1/2 cup coconut flakes 
  • 3 TBL coconut oil, melted
  • 3 TBL cashew butter 
  • 3 TBL honey
  • Dash pumpkin pie spice 
  • 1/2 cup Happy Day Brands Chocolate Wafers
Directions:
  1. Mix this all together in a big mixing bowl and press into a parchment-lined bread pan.
  2. Freeze for at least an hour then cut into bars!
Note: these must stay refrigerated because of the coconut oil
