Gooey Toasted Marshmallow Brownies

Because what’s a better way to finish off the weekend than baking something sweet {also fudgy, chocolaty & nutty} + you guys will never guess the secret ingredient for these. You probably have some left over from meal prep & it makes them super dense.

Ingredients:

  • 1-1/2 cups cooked and cooled quinoa
  • 1 cup coconut sugar
  • 1/2 cup ghee or grass-fed butter
  • 5 oz Happy Day Brands Chocolate Wafers, finely chopped
  •  3 large eggs, room temperature
  • 1/4 cup cocoa powder
  • 1/2 cup walnuts, toasted and chopped
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 5-6 marshmallows, chopped (I used smash mallows - toasted vanilla)

Directions:

  1. Preheat the oven to 350 F and grease a 9x9 pan then line with parchment that enough overhangs on the sides to be able to pull the brownies out from the pan
  2. In a food processor, blend the cooked quinoa till completely smooth
  3. Put the ghee or butter in a microwave safe measuring cup and melt. slowly add in the finely chopped chocolate to melted ghee to melt the chocolate completely.
  4. Add all the other ingredients into the food processor besides the walnuts. Fold those in last with a spatula
  5. Evenly spread the batter in the pan (good luck not eating half the batter ;) ) and dollop with chopped marshmallows
  6. Bake for 30 minutes or until toothpick comes out with a few crumbs from the center
  7. Let cool for at least 20 minutes then dig in!
