Buttermilk Crumb Coffee Cake made with Purpose Flour

Ingredients:

For the muffins:                      

  • 2 1/4 cups new low carb Happy Day Brands Purpose Flour (1 Net carb) Use code EARTH15 at checkout for 15% off today
  • 1/2 tsp salt 
  • 2 tsp. cinnamon
  • 1/4 tsp ginger
  • 1 cup brown sugar*
  • 3/4 cup coconut sugar or white sugar*
  • 1/2 cup coconut oil, melted
  • 1/3 cup applesauce
  • 1 cup chopped walnuts or pecans
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 egg, beaten
  • 1 cup buttermilk

* for low carb/keto:
1) use Happy Day Brands ‘Purpose’ flour
2) sub swerve brown sugar for brown sugar
3) sub swerve white granular for coconut/white sugar

        Directions:

        1. In a large bowl, mix flour, salt, 1 tsp of the cinnamon, ginger, both sugars, coconut oil, and applesauce. Remove 3/4 cup of this mixture, and to it add the nuts and the remaining teaspoon of cinnamon. Mix well, and set aside to use as a topping. 

        2. To the remaining batter, add the baking soda, baking powder, egg and buttermilk. Mix to combine all ingredients. 

        3. Pour the batter into a well-greased 9x13” pan and sprinkle the topping mixture evenly over the surface. Bake at 350 degrees for 40-45 minutes.
